As many of you know, since the fall out of our head chefs at Salt & Smoke, we have been searching for a new candidate to take over the shop. Although we had the pleasure of meeting with many talented individuals, we still feared that no one would really be able to give the truck the same love and attention that Josiah, Pep, and I were able to give over the years. Although we wish we could dedicate more time to Salt & Smoke, opening Vivian as a mere husband and wife team with an albeit great, but also a bare bones team, by our side takes a lot of work, time, and energy. So, when Burial Beer offered to take over Salt & Smoke as part of their goals moving forward with their second location, we knew we needed to seriously consider that option as we felt stretched so thin.

It has been very hard to think about saying goodbye to the truck, but opening a brick and mortar restaurant has been Josiah and I's dream since we moved to Asheville 5 years ago and built our way through busking, pop ups, and eventually the truck that we have all come to know and love.

So we have decided to focus wholly on Vivian, building it up a new home for all our dedicated Salt & Smoke regulars. We want to thank all our guests that we have gained over the years; your love and support is what has fueled us to keep pushing on and achieve our dreams! We hope to see you all at Vivian soon, where we can build new relationships over exclusive Burial brews and Josiah's delicious food all over again.

The menu at Salt & Smoke was a great starting point for our chef to begin his exploration of antiquated and classic recipes across European culture.  At Vivian, that fascination has grown and you will find a variety of its influence on the menu---much of it heavily on the French side, but also featuring of Dutch, Nordic, Belgian and more.  His Southern heritage often shows its face amongst these recipes, whether it be our homemade saltines and cured smelt or merely sourcing the wonderful produce and proteins from the region.  We still source the incredible beers from Burial (including the Saison du Vivian that was brewed just for us!) as well as other unique local and European beers.   You will also find an extensive wine list that ranges from old world classics to rare varietals.  Citizen Times just featured us as the one of the best spots in the RAD to get cocktails; on our list you will find some seasonal creative cocktails like our summer strawberry shrub.  We offer bar dining, indoor, and patio seating and are open Tues - Sat for dinner (5-10:30pm) and Sunday for brunch (10:30am - 2:30pm).  Free parking in our lot across from the restaurant and on the street.  You can see our full menu here!
